Tjaden, the daughter of former Omaha Mayor Jim Suttle and former state Sen. Deb Suttle, went missing Jan. 27.
The staff member stopped the inmate while leaving the dining hall and told him to throw away food inside a pocket. The inmate refused and punched the staff member repeatedly.

Embattled Dodge County Attorney Oliver Glass was in the Dodge County Jail Friday morning after he was arrested on suspicion of violating his probation over a March DUI.
A pursuit of a robbery suspect involving Lincoln police and Nebraska State Patrol vehicles involved the male suspect firing shots at the officers during the chase, officials said.
A Casper woman died in the shooting and a 26-year-old man remained in a Lincoln hospital Monday in grave condition, Sheriff Terry Wagner said.
Sheriff Terry Wagner said Christian Alexander was shot first after pointing a gun at a State Patrol trooper, then at two troopers and a Lincoln officer, identified by acting Police Chief Brian Jackson as Jesse Hilger, after the SUV came to a rest.
The Nebraska State Patrol says Jade Nicole Sides was safe when she located in Iowa.
"We are aware of additional contact with law enforcement in at least one other state, and crimes that occurred in other states as well," including Florida and Arkansas, said police in Muskogee, Oklahoma.
Jake Gonzalez posted $25,000 of a $250,000 bond to get out of jail in the previous case. He is currently being held without bond and hadn't been charged as of Tuesday morning.
A State Patrol spokesman said a trooper saw a cargo van speeding and fail to signal as it headed east on I-80 at about 3:50 p.m. During the stop, the deputy smelled marijuana coming from inside the van.
The crash remains under investigation by the Custer County Sheriff's Office, Nebraska State Patrol and the Federal Aviation Administration.

The Stanton County Sheriff's Office responded to a 911 call on Friday related to a stabbing in West City Park in Stanton. According to the sheriff's office, the victim had five stab wounds to her back and arm.
The man, a 23-year-old from Vacaville, California, was arrested on suspicion of child abuse and contributing to the delinquency of a minor. He was jailed at the Lincoln County Detention Center.
Despite recent salary increases, the state corrections union says pay for Nebraska prison guards still lags behind that of county jails, which are luring away too many state employees.
Attorney Perry Pirsch called for the Lancaster County Attorney to withdraw the appeal or resign over it. "They continue to waste tax dollars for a non-crime and they are sending the wrong message about gun ownership," he said.
